This recipe will definitely become a summer favorite! Made with nourishing ingredients like chia seed, and collagen, this summer treat takes LESS THAN 10 minutes to prepare, and you only have to have a little bit of patience while it chills in the refrigerator.

It is so smooth, creamy and luscious. You'll be so pleased with how delicious it is! My chilled Mocha Latte pudding tastes WONDERFUL during the middle of a hot day. My clients love when I top it with toasted pistachios, cashews, sunflower seeds, and chopped figs, but please...adorn yours with all of your favorites. Dehydrated berries make a fabulous topping, too!
Ingredients
- 2 bananas, peeled
- 1 can full fat coconut milk
- 2 tablespoons date syrup (maple syrup or honey)
- 2 tablespoons of your choice nut butter
- 2 tablespoons of collagen peptide powder
- 2 tablespoons of hemp seeds
- 4 teaspoons ground coffee
- 3 teaspoons of chia seed
- 2 teaspoons of GF vanilla extract
NOTE: This recipe contains caffeine and isn't suitable for children.
How To
For Pudding:
- Blend all ingredients in a high-speed blender.
- Pour creamy liquid into glass jars and chill for 1 hour.
- Garnish with your choice toppings.
For Popsicles:
- Blend all ingredients in a high-speed blender.
- Pour creamy liquid into molds and freeze for 4 hours.
- If desired, dip into melted chocolate and garnish with nuts, and or, dried fruits.
