Pretty Paleo Pancakes (Gluten-free. Grain-free. Dairy-free)

I really wanted to make pancakes, but wanted to create something new and fun for us to have, for Saturday breakfast. The idea of pink and white (and green) pancakes, instantly came to mind! I decided to use Birch Bender Paleo Mix as the base, but decided to amp-up the protein value by adding almond flour and two eggs to the batter, which also gave my pancakes a very nice, extra fluff! Beet Powder and Matcha Green Tea Powder worked perfectly to aesthetically satisfy my pretty pancake need. You can use one or both colors. 

 

This recipe makes four to six pancakes
This recipe takes less than 25 minutes to make

Ingredients

  • 1 cup almond flour 
  • 1/2 cup Birch Benders Paleo Pancake Mix (best price is at Costco!)
  • 2 whole eggs
  • 1 cup water
  • 1/4 teaspoon of beet powder 
  • 1/4 teaspoon of matcha green tea powder

*Add more beet or matcha powder if you want more color

Note: This is not the pancake mix that that is available for purchase on the website. 

 

How To

  1. Combine all ingredients, except for the beet powder and green tea powder, in a medium bowl.
  2. Whisk for 2 minutes, making sure there are no lumps. 
  3. Divide batter into half (for 2 colors), or into thirds (if you are doing 3 colors)
  4. To one bowl of batter add the beet powder. Whisk to combine. To the other bowl of batter, add the matcha powder, or leave it as white. Whisk to combine. 
  5. Heat 2 teaspoons of your choice fat in a skillet (I use unrefined coconut oil) over medium heat. Swirl oil to coat skillet. Pour in 1/4 cup batter for mini pancakes, pour in 1/3 cup batter for medium pancakes. Cook for 2-4 minutes on each side.
  6. Repeat step until all of your batters are used up.
  7. For your presentation: Alternate colors to create a pretty ministack! Decorate with your choice fruits, seeds, nuts, chocolate chips, etc..Drizzle with your choice of syrups, puddings, or yogurts.
